Like many good things, this started off as a joke on Twitter. When faced with an alignment chart of french fries I replied that I am a potato paladin, protecting the right of every man to each any potato in any way they'd like. That's how the potato paladin was born.
Next thing I know it's two hours later and I wrote the potato paladin class. It's based on the actual paladin class (mainly the oath of devotion paladin) with some additions.
